Eating right doesn’t have to be boring. Last night we had Nightshade Chili and I had to share this recipe with you. Nightshade vegetables includes eggplant, sweet potato, tomatoes, and peppers.  Check out this awesome recipe including a few of my favorite nightshade vegetables.

Ingredient List:
1 pound of sweet potatoes, (peel first)
1 large eggplant

4 garlic cloves
2 cups of tomatoes
1 stalk of celery
1 large white onion
1 teaspoon chili powder
1 teaspoon cumin powder
Salt and pepper to taste
Oils & Sauces:

1 cup of tomato sauce
5 tablespoons of olive oil



1. In a large skillet heat the coconut oil and add the onion, garlic and celery. Stir until the onions are translucent.

2.Add the eggplant and sweet potatoes to the pan. Mix well with the other vegetables and make sure you coated in the hot oil. Stir for approximately 5 minutes.

3.Add the tomato sauce, tomatoes, chili powder, cinnamon, cumin and the salt and pepper to taste. Be sure to mix it all well.

4.Turn the heat to the low, and allow to cook for another 30 minutes.

5. Garnish with Cilantro and serve.
